Huver Castillo is a third-generation Colombian coffee producer from the Nariño region, known for its high altitudes, rich volcanic soils, and ideal conditions for specialty coffee production. The El Paseo farm, surrounded by native trees and mountainous landscapes, has belonged to the family for over 20 years.
The Gesha Aponte lot stands out for its elegance and complex citrus profile. The cherries are handpicked at peak ripeness and undergo a controlled 20-hour pre-fermentation. The coffee is then anaerobically fermented in sealed tanks for 210 hours, using an inoculation of beer hops and sugarcane juice. This innovative process enhances the coffee’s aromatic intensity, sweetness, and sensory complexity.
After fermentation, the beans are sun-dried for 10 to 20 days and stabilized for 30 days in GrainPro bags, ensuring greater balance and clarity in the cup.
