Huver Castillo, a third-generation producer in Nariño, Colombia, cultivates this elegant Gesha Aponte lot at the El Paseo farm, which stands out for its complex citric profile.
The cherries, hand-picked at their peak, undergo a 20-hour controlled pre-fermentation, followed by a 210-hour anaerobic fermentation in sealed tanks inoculated with beer hops and sugar cane juice. This innovative process drastically intensifies the aromatic components and sweetness.
Finally, the coffee is sun-dried and stabilized for 30 days in GrainPro bags, ensuring a perfect balance and maximum flavor definition in the cup.
