Colombia Excelso is not a botanical variety, but rather a prestigious export classification that ensures uniform, larger-sized beans free of defects. Carefully selected by screen size (screen 15/16) and sourced from various regions across the country, these beans guarantee a consistent sensory profile year-round.
This lot is composed of 100% Arabica varieties, specifically Caturra, Typica, Castillo, and Bourbon, each playing a fundamental role: Caturra brings a bright acidity and clarity of flavor; Typica provides elegance and a smooth body; Castillo offers balance and consistency; and Bourbon enriches the blend with its natural sweetness.
Grown on small family farms, the coffee benefits from a slow maturation process, which translates into greater complexity and sweetness in the cup. The harvesting is entirely manual and selective, taking place between October and January, with a second harvest (known as the mitaca) between April and June.
After roasting, this coffee reveals a medium to full body, with a balanced and perfectly integrated acidity. In its green state, the bean stands out for its density and uniformity, showing stable moisture levels and a predictable, reliable behavior during the roasting process.
