The daughter of coffee producers, María Belén Díaz has been surrounded by coffee for as long as she can remember, with more than 12 years dedicated to specialty coffee production. Her journey took on a new dimension after several years working as a quality analyst in the Cauca region of Colombia. It was there that she refined her palate through cupping and gained the technical experience that led her to devote herself entirely to cultivation. Today, she is part of the group of 96 women involved in the Huila Condor Project and takes pride in being one of the first producers in the region to obtain certification in coffee processing from The Forest Academy in 2024.
The work on the farm is carried out as a team alongside her husband, Narciso Narváez, and their three children. The family's story in Acevedo began from scratch, initially working on land belonging to others, until their hard work and ability to save allowed them to fulfil their dream of purchasing the Resinas farm. It is there that they grow varieties such as Papayo, Caturra, Castillo, Gesha and the acclaimed Pink Bourbon, driven by the ambition to see their coffee recognised around the world.
This particular lot, named Pink Bourbon Creation, reflects this expertise. The process begins with a meticulous selection of Pink Bourbon cherries at the ideal stage of ripeness. This is followed by a 24-hour pre-fermentation in cherry and, subsequently, a 36-hour anaerobic fermentation in bags, wrapped in mucilage blankets to enhance aromatic complexity. The coffee is then dried on raised beds for 15 days, until it reaches the ideal moisture level.
The result is a semi-washed coffee with a vibrant and structured cup.
