Daimes Polanía represents the third generation of a lineage of coffee growers where artisanal knowledge is a living legacy. His estate is integrated into a natural reserve, teeming with native species and preserved water springs, which provide a unique ecosystem for cultivation.
Within this biodiverse setting, premium varieties such as Castillo, Colombia, Caturra, and Pink Bourbon are grown. The farm employs circular economy and sustainability practices,such as transforming coffee husks into organic fertilizer, returning to the earth what it so generously produces.
Golden Crush, made from Caturra cherries, undergoes a highly controlled process: a 12-hour pre-fermentation in cherry, followed by 50 hours of aerobic fermentation in concrete tanks. The beans are then washed and dried on raised beds for 15 days with constant monitoring, and finally stabilized for another 15 days in special bags to balance flavor.
This extended fermentation and resting process results in a coffee with great complexity and balance, reflecting meticulous attention at every stage of production.
