For this specific lot, the hand-picking involved ten workers and took place between December 2023 and March 2024. Only cherries at peak ripeness were selected, with a sugar content of 22° Brix.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eImmediately after harvesting, the coffee underwent a 120-hour dry fermentation in sealed barrels, at temperatures ranging between 22 and 24 °C.
